One of the park’s early tenants is La Unicia Pupuseria, owned by Immers Menijvar. Drawn to the park's potential, Menijvar was eager to introduce Bozeman to the Salvadoran delicacy of pupusas. The food truck's popularity is a testament to the park's ability to attract both locals and visitors.
While the summer months have been a boon for the park, James is already looking ahead to the challenges posed by Montana's winter weather. To address this, he is planning to construct an on-site building that will provide indoor seating. James has a vision for the entire area, stretching from 19th and Babcock to Feed Cafe, which he has dubbed the "Northern Lights district." To fully realize this vision, he is actively seeking additional food trucks to join the park. Whether it's permanent or rotating vendors, the goal is to create a diverse culinary experience that keeps patrons coming back for more.
As the park gains traction, the owners are focusing on spreading the word about this new community hub. A block party is planned for August, promising live music, food, and fun for the whole family.
